Deep Fried Cream Dory + Broccoli with Cheese sauce

I love Sundays. That’s the only time I get to relax and spend time with my family. And the best way to bond with them is through food. I feel blessed that the love for food and cooking expertise run in our family. Kaya ayun, halos sa amin, pwede na i-cast sa Pugad Baboy sitcom, at malapit na rin ako mapabilang😀.

Kahapon, hindi ako nakasama sa birthday celebration ng kuya ko sa Batangas (BTW, belated Happy Birthday, kuya. Bawi ako next time). Hindi rin nakasama si ermats at yung isa kong kapatid. May mga gawain kasi ako na kelangan tapusin, pagkakataon kong linisin ang buong bahay habang wala pang tao, at ayoko mamiss ang laban ng Azkals laban sa Sri Lanka.

Para hindi naman kami malumbay, I decided to cook something special. Bumili yung ermats ko ng creamy dory fillets. Actually, ngayon ko lang nalaman ang tamang spelling nun. I thought it was ‘kimidori‘. It looks like a pale salmon with a similar taste of tilapia. Plus, nagpabili rin ako ng broccoli at cheese to serve as side dish. Na-inspire ako magluto from my first dining experience at Yakimix; I remember I ate a nice broccoli with just cheese sauce. Ansarap. Kakaibang sensation naramdaman ko. Di lang ‘Alleluiah” ang narinig ko, nagmisa pa sa utak ko😀.

So here are the ingredients. (By the way, I can’t give exact measurements kasi tumatantya lang ako> Diskarte ang aking measuring cup. Oha, oha!)

  • Creamy Dory fish fillet.

    At first, akala ko dory as in si Dory sa Finding Nemo. Baka magkaroon kami ng short-term memory loss… ay meron na pala ako haha!
  • Broccoli.

    How cute, di ba? So green. Actually, one of my fave vegetables ang broccoli. Packed with lots of vitamins and minerals. Good source of Vitamin C. Ako na ang dietician/nutritionist! LOL
  • Small packs of cheese. I chose Quickmelt, since… madaling matunaw. Quickmelt nga eh. You can try any kinds of cheese: pwedeng keso puti, yung keso de bola from previous holiday (grabe na lang kung meron, baka inaamag na ah), or yung cheesiness mo sa mga mahal mo sa buhay. So keso.
  • For the cheese sauce: a cup of all-purpose flour. All-purpose nga ba? Try nga natin. Plus, 1 bar of butter and a small can of Evaporated milk. I only got that instead of full cream milk dahil naubusan na ako. At mura lang, kita niyo naman eh. Php 15 lang haha!
  • And for the creamy dory fillet, 1 pack of breading mix. I prefer Crispy Fry Mix. Masarap siya, no hassle sa luto (di na kelangan ng itlog), at crispy when cooked… rinig mo yung crispiness😀.

And the procedures:

Let’s start with Deep Fried Creamy Dory Fillet🙂.

1) Wash the fillets first, drain, and slice to bite size. Yung totoo, malaki bibig namin? You can season the fish with a seasoning sauce. Nope, hindi si Vilma Santos ang ginamit ko.

2) Lamasin… ang isda hanggang sa maabsorb ang seasoning liquid😀.

3) Prepare the deep fry mix and pan for deep frying. Put enough oil on pan. Mahal ang mantika😀. Medium heat lang yung init. Mahal ang LPG at di masarap kumain ng uling na pagkain😀. Para organized, use your one hand for coating the fillets with the mix and then use your other hand while putting the coated fish sa pan. Plus, don’t coat too much. Pagpagin niyo para madaling maluto yung isda.

4) Fry the fillet well until golden brown (ganun pala, may iba’t ibang kulay ang brown. Kakaibang spectrum ah. May silver brown kaya? Joke.) Turn the fillets on the other side pag luto na yung kabila. Bantayang maigi yung apoy.

5) Pag luto na, ilagay sa platong pinatungan ng tissue para madrain yung mantika. Iwas cholesterol. Tapos itabi para di maabot ng mga pusa/aso at ng mga gusto pumapak🙂.

Now for the Cheese sauce:

1) Slice a half of butter and melt it. Low fire. Madaling mangitim ang melted butter. Tip ko sa inyo: put a small amount of cooking oil.

2) Pag tunaw na yung butter, put the flour (konti lang, mga 1/4 tasa lang) then mix hanggang sa matunaw yung kawali. Joke😀. Remember, low fire ah.

4) Then put the milk (ampangit pakinggan pag derechong binasa haha). Stir until fine ang consistency/wala ng buo-buo. Low fire ulit, bantayan.

5) Put the cheese. (Hindi grated yung nalagay ko kasi nawawala yung pankayod namn). The best thing kung bakit Quickmelt yung ginamit ko kasi mabilis matunaw. Stir the sauce hanggang sa tunaw na yung keso.

6) It’s done kapag almost melt na yung keso and then fine yung consistency niya. If masyado malapot, you can put some water on it and stir again. Lalapot yan dahil a) kulang yung milk, b) sobra sa flour, and/or c) hinayaan mo😀. Season with salt and pepper to taste. Konting-konting asin lang since medyo maalat na yung keso.

Lastly, the broccoli.

1). Madali lang ang gagawin. Magpakulo ng tubig sa pan (in my case, kaldero) then pag kumulo, ilagay ang broccoli then cook it for about 3 – 5 minutes. I dunno if the process is called poaching or blanching. Basta ang tawag ko, pagluto.

2) Be careful not to overcook, or else di maganda ang kakalabasan. Ang aim is to have a cooked but still fresh and crunchy broccoli. Basta saglit lang. After few minutes, tanggalin sa kumukulong tubig at patuluin. Set aside.

The last step, the plating. My favorite part. Kung gusto niyo dagdagan ng konting artistic touch aside from salt and pepper, pwede niyo i-arrange yung food on the plate. Parang pang 5-star hotel ang dating, di ba?

Ilatag niyo lang ang few pieces of creamy dory sa isang side, then put some nice cooked broccoli sa tabi. You can put some rice kung gusto niyo mag-kanin. Lastly, Drizzle some cheese sauce on top.

Then, that’s it. We have our Deep Fried Cream Dory + Broccoli with Cheese sauce.

Now my most favorite part. Eating😀.



Conclusion: I therefore conclude na masarap ang kinalabasan. Parang kumain ka na rin sa Yakimix or sa Tokyo Tokyo. Basta ang critical element dito ay yung heat. Huwag masyado mainit ang kalan, madaling masunog ang mga niluluto mo or else kakain ka talaga ng uling. Tamang coating lang sa mga fillet. And also make sure na fresh yung isda, baka mamaya galing pala yan sa fishkill. Yuck. Tapos, konting flour lang para sa sauce. Pag masyado marami, mukhang magluluto ka ng pancake ang kakalabasan. And about sa broccoli? Try niyo kumain nun. Kaya nga may cheese sauce para ganahan kayo kainin yun. Sarap, promise!
