Homemade Spicy Chicken

I love chicken. Isa yan sa paborito kong pagkain since childhood. Whether fried, deep fried, roasted, steamed,  inihaw, inasal, inadobo, tinola, afritada, sinampalukan, sinampal, tinadyakan, sinuntok… name it, I eat chicken. Well, except from eating a live one. Di po ako taga-karnibal. CHICKEN!

Favorite parts ko sa chicken ay legs at breasts. No pun intended. CHICKEN!

One Sunday lunch time, nagluto yung ate ko ng Buffalo Wings. Sounds expensive no? Well, good thing she knows how to prepare it. Saludo ako sa ate ko. The moment I bit a piece of it, it feels like heaven (sa sarap) and hell (sa anghang). Pero masarap! :)

In the first place, bat nga ba Buffalo Wings? Here’s the answer.

Then I figured it out how to make one. This time I use not only wings but the other parts. I didn’t include the bony parts since mahirap kainin. I derived the recipe and then I tweaked it.

Here are the ingredients:

  • 1 1/2 kilo fresh dressed chicken wings, drumsticks, and breast. Cut into smaller size.

  • 1 clove(s) of garlic, minced.
  • 1/2 onion, chopped.
  • 3 siling pangsigang, chopped. Or you can use siling labuyo for more spice.

  • Breading mix pack enough for the chicken. In my case, I used 1 pack of Crispy Fry.
  • 1 pouch of 250 g tomato sauce (I used Del Monte Tomato Sauce).
  • 1/4 cup butter

And now the procedure:

1) Hugasan muna ang chicken parts at patuluin sa colander hanggang sa mawala ang tubig. Afterwards, ilipat sa isang malaking bowl at lagyan na ng breading mix. Then shake, rattle, and roll!

2) Heat pan with medium heat and then put some cooking oil. Deep fry the breaded chicken until golden brown.

3) Place the fried chicken parts in a colander or on a plate with some paper towel (sosyal, pwede namang tissue diba?). This will drain excess fatty oil. Nakakawalang gana pag masyadong mamantika.

4) And for the sauce part. You can start this habang piniprito niyo yung chicken. Basta you have another stove. If wala, iprito niyo muna lahat ng manok. Got it?

On another saucepan, melt some butter. Put a little cooking oil to avoid burning the butter too much.

5) Sauté garlic. At this point, the aroma is so tempting. Patience, my dear amigos.

6) Then sauté onions. Sabi ng ate ko, pwedeng huwag lagyan ng sibuyas. Dahil maarte ako, nilagyan ko. Recipe ko eh. Angal?

7) Pag nag-brown na yung garlic at naging translucent yung onions, pour in the tomato sauce. (DEFINE TRANSLUCENT. Ah basta pag luto na yung sibuyas, yun na yon!). Lower the heat and stir continuously until the sauce thickens. Don’t overcook the sauce! Mantika na lang ang matitira.

8) Put the chopped chili. Then turn off the heat.

9) Now you can place the chickens on the sauce. Toss. Or you can put and mix them in a larger bowl.

10) Voila! Yur Spicy Chicken iz reedee tu bee seervh! Bon appetite!

This is easy to prepare. Hindi kailangan ng mga chef expertise at kitchen maneuvers katulad ni Chef Boy Logro (Speaking of Chef Logro… nakita ko siya one time sa Jolibee Magallanes with his kumpadres. Para siyang pinaitim na Super Mario. At nagjoJolibee rin pala siya. Yum yum yum! Yum yum yum!). This only requires the basic ingredients I mentioned above and patience.

You can eat this with a salad or a piping hot rice. Kahit nga wala ng kanin, solb ka na. Yun lang pag marami kang kalaban sa pagkain. Di ko na problema yun.

I recommend this to those endless oh-so-dry fried chicken nights. You can do this for birthdays, pag nagbreak kayo ng girlfriend/boyfriend mo, pag may inuman, pag wala kang budget para kumain sa T.G.I.F., pag nanganak yung alaga mong manok, pag blessing ng bahay niyo, pag idedemolish yung bahay niyo (WTF), and so on.

Chicken Adobo

Naalala ko nung nasa elementary pa ako, isa sa favorite subjects ko ang Sibika at Kultura.

At isa sa mga pinag-aralan namin noon (and I’m pretty sure lahat tayo) ay ang mga pambansang sagisag.

Nandyan ang pambansang watawat, awit (“Lupang Hinirang”, hindi “Bayang Magiliw”), bayani (Jose Rizal), bulaklak (Sampaguita), prutas (mangga, at hindi ako mahilig dyan), hayop (Ako, joke. Ang kalabaw, bow), at kung anu-ano pa.

Pwede rin natin isama sina Allan K bilang pambansang ilong , si Diego as pambansang bading, at si Vice Ganda bilang pambansang kabayo. (Hindi ako nag-imbento. Matagal ng umiikot ang birong iyan.)

Pero ano nga ba ang pambansang ulam? Likas na sa ating mga Pinoy ang mahilig kumain. At dahil napaibig tayo sa pagkain, sagana tayo sa iba’t-ibang putahe. Sa dami ng isla ang Pilipinas, madami tayong masasarap at malinamnam na ulam, mapa high tide o low tide man. Kaya hindi na nakakapagtataka kung may pagtatalo sa kung ano ba talaga ang pambansang ulam o pagkain. Ayon sa mga nababasa ko, andyan ang sinigang, adobo, at lechon. Hindi rin nagpapatalo ang tuyo. Ang asin, pwede kaya?

Ok. Isinulat ko lang yan para may intro. Daming satsat, no?Last week, nagluto ako ng adobo, adobong manok particularly. Ang nagturo sa akin kung paano magluto ng adobo ay ang aking erpats. Isa yan sa mga natutunan kong lutuin noong nasa high school pa ako dahil kailangan kong matuto. Wala kaming househelper (ang shala ng tawag) since high school pa ako or kung meron man, hindi nagtatagal. Kaya thankful ako na marunong ako magluto.

I can cook all kinds of adobo pero I’m going to share my simple adobong manok recipe.

So here are the ingredients:
► 1 kilo whole chicken, washed and cut into smaller pieces (para madaling paghati-hatiin per serving).


►vinegar (kalahating tasa), soy sauce (1/4 ng tasa), and chicken bouillon cubes (we only need one, tabi mo yung isa). Hindi po ako biniyaran ng Datu Puti for this.

►chopped onion and minced garlic. Hindi naman ako naiyak habang hinihiwa ko ang sibuyas.

And now the procedure:

1) Heat pan. Put some small amount of cooking oil. Then put the garlic and onions and wait until they’re sauteed well. Huwag sunugin dahil mahirap magbalat ulit ng sibuyas at bawang. Sayang sa oras.


2) Ilagay ang mga manok at sangkutsahin. Ano ba ang English ng sangkutsa? I think it’s sauté. Sangkutsahin ang manok para hindi maging malansa ang karne at para maluto ng maigi. Ayaw mo maging dinuguan ang adobo mo.


3) Hinaan ang apoy at takpan. Hayaan mong magtubig ang karne (ito yung juices na galing sa manok). Pwede kang makipagkwentuhan sa kasama mo basta huwag ka magFacebook habang hinihintay mo ito. Baka masunog pa yung niluluto mo.


4) Regularly check the meat. Dapat wala ka na makikitang dugo or hilaw na part. When the chicken is kinda tender, you may proceed to the next step…


5) Lagyan mo na ng soy sauce…


6) And then vinegar…


7) And for extra chicken flavor, you may add a chicken broth cube + 1/2 cup of water. Option mo lang. Pwede mo ring lagyan ng laurel leaves para bumango yung adobo. You may add black pepper. No salt needed at baka magkakidney stones ka pa.


8) In this case, may natira akong onion and garlic so I put them to add more flavor and aroma. Put the lid and let it simmer for about 10 minutes or until the sauce boils. Huwag na huwag niyo munang hahaluin pagkalagay ng suka at toyo, or else pagsisisihan mo na sa bandang huli at papalayasin ka dahil palpak ang adobo mo. Kapag kumulo ng todo, pwede niyong haluin.


10) Let it cook until the meat are extra tender and the sauce becomes kinda thick. Pero some prefer it kinda dry, yung tipong i-gigisa yung karne ulit tapos paunti-unting nilalagyan ng sarsa hanggang sa magmantika. Basta ang mahalaga lasang adobo ang niluluto niyo.

And there you have it, ladies and gentlemaniacs, my own version of Adobong Manok/Chicken Adobo. Too bad hindi ko man lang nagawan ng food presentation for this blog entry since dumating na yung mga parents ko for dinner and I didn’t have time for food platting and photographing.

I think this is easy and I recommend this for those who want to try and learn how to cook. Wala namang mahirap dito. Hindi ka naman manghoholdap for the ingredients. The challenge here is how to achieve that distinctive adobo taste: not that too sour but not that too salty. And pwede ka mag-experiment. You can add potatoes, pineapple chinks for some extra sweetness, or even hard-boiled eggs para complete chicken package talaga.

1 day shoot + cupcakes

My dear college friend and my former school bus mate, Hannah, asked my help for her masters project about IT ethics. Sinabihan niya ako about months ago pero she only remembered and we planned it few days before the deadline. Now, spell ‘panic’.

P – A – N – I – C. (Ok, utu-uto, inispell nga haha.)

They had to come up with a 30 second-1 minute advertisement/audio visual presentation about ethical Information Technology advocacy (like cyberbullying, internet security, responsible ‘clicking’, internet hoax, atbp) and must be uploaded at YouTube.

We picked private information security. Most of us are guilty about this: mahilig tayo mag-post or mag-share ng kahit ano tungkol sa atin. Pero there are certain risks and disadvantages about oversharing your personal stuff. You might never know, yung mga pinopost natin na mga personal na bagay tungkol sa atin ay maaring kumalat nang di natin inaasahan. Pwede ka magkaroon ng mga stalkers, mawalan ng privacy (at gawan ka ng chismis), at magkaroon ng ‘posers’ (mga taong nagpapanggap na ikaw). Baka kinabukasan, magulat ka na lang na makita mo yung picture mo sa di inaasahang lugar. Scary.

So the project is entitled “Share”. It’s about this average girl who loves social networking sites. Then she ‘shared’ her pic there. Tapos all of a sudden, the next day, di niya inaasahang kakalat yung picture niya sa mga unexpected na lugar. No matter where she is, the horror of oversharing still follows her.

Ginawa lang namin yung project niya half-day. Hannah was the producer and I became the director and cameraman. We started at past 3 PM then finished at around 11 PM. Naging talent namin yung sister niya na si Haina since yung ibang friends na gusto gawing talent ni Hannah ay hindi available. Medyo challenging yung shoot day since late na kami nagstart and the weather wasn’t that good. Eh according to our storyboard, some of the scenes require outdoor shots. Pero it went well naman :)


Here’s the rough storyboard. Pasensya na kung pangit yung drawing. I only did that the day before the shoot. Nakakamiss na ang Video Production courses sa college.

So eto na yung finished product. Ito ang resulta ng aming pagpapaambon (kahit yung camera lang ang pinapayungan). I helped in editing the video. Sorry for the low quality. Medyo ni-rush namin. Ginawa namin ang video at in-upload namin the day of submission. buti na lang at umabot kami sa deadline :)

And what inspired me to help in her project? Food! Dahil ako ang dakilang bwisita nila, binigyan nila ako ng napakasarap na merienda :)


Ito ang aking simple pero napakasarap na merienda. Her mom gave me a piece of baked-fresh cupcake with a nice cold glass of iced tea. At naka tray pa. Nagbe-bake pala yung kapatid ni Hannah nang dumating ako. Amoy pancake + cupcake yung buong bahay. Nakakatakam tuloy. Sabi ko huwag na lang kami magshoot at magbake na lang kami :D


Segue lang. Ang ganda ng carving details ng upuan nila sa dining area.


Then evening comes. This was our dinner. Dinner ito ah. Di ako sanay na ganyan ang hapunan namin. Sanay ako sa tuyo lang. Haha! I forgot kung sino nagluto pero they prepared this nice pasta together with hotdogs and bread. Gusto ni Hannah ng well-done na hotdog. Yung totoo, nasa steakhouse kami?

Mas masarap ang food pag may kasamang kwentuhan. Andami naming pinagkwentuhan to the point na nakalimutan namin na may tatapusin pala kaming project :D

Natapos namin yung editing at naupload na rin sa YouTube around 11 PM. I needed to go home para masauli yung Canon 550D ng pamangkin ko (Super thanks, Macky! Sorry kung lagpas sa intended time). Then before I went home, Hannah gave me an envelope (alam niyo na kung anung laman nun) and a nice box of cupcakes (made by Haina during breaks). Awww. How toughtful. How Goldilocks. Sinasabi ko na nga ba. Nagdududa ako kay Haina nun. May inaayos siyang mga cupcakes na very different aside from ibang cupcakes for her relatives. Di ko akalaing sa akin pala :) .


At first I didn’t want them to eat kasi super cute ng cupcakes. But I got tempted. So good. Taste like heaven. I can hear the Alleluia. Nag Holy Eucharist pa! :D

I ate one cupcake a day (there were 6, so 6 days). I wish I had more cupcakes. Sarap isabay sa malamig na iced tea or  kape (syempre mainit na kape, kasing-HOT ko. JOKE.)

Deep Fried Cream Dory + Broccoli with Cheese sauce

I love Sundays. That’s the only time I get to relax and spend time with my family. And the best way to bond with them is through food. I feel blessed that the love for food and cooking expertise run in our family. Kaya ayun, halos sa amin, pwede na i-cast sa Pugad Baboy sitcom, at malapit na rin ako mapabilang :D .

Kahapon, hindi ako nakasama sa birthday celebration ng kuya ko sa Batangas (BTW, belated Happy Birthday, kuya. Bawi ako next time). Hindi rin nakasama si ermats at yung isa kong kapatid. May mga gawain kasi ako na kelangan tapusin, pagkakataon kong linisin ang buong bahay habang wala pang tao, at ayoko mamiss ang laban ng Azkals laban sa Sri Lanka.

Para hindi naman kami malumbay, I decided to cook something special. Bumili yung ermats ko ng creamy dory fillets. Actually, ngayon ko lang nalaman ang tamang spelling nun. I thought it was ‘kimidori‘. It looks like a pale salmon with a similar taste of tilapia. Plus, nagpabili rin ako ng broccoli at cheese to serve as side dish. Na-inspire ako magluto from my first dining experience at Yakimix; I remember I ate a nice broccoli with just cheese sauce. Ansarap. Kakaibang sensation naramdaman ko. Di lang ‘Alleluiah” ang narinig ko, nagmisa pa sa utak ko :D .

So here are the ingredients. (By the way, I can’t give exact measurements kasi tumatantya lang ako> Diskarte ang aking measuring cup. Oha, oha!)

  • Creamy Dory fish fillet.

    At first, akala ko dory as in si Dory sa Finding Nemo. Baka magkaroon kami ng short-term memory loss… ay meron na pala ako haha!
  • Broccoli.

    How cute, di ba? So green. Actually, one of my fave vegetables ang broccoli. Packed with lots of vitamins and minerals. Good source of Vitamin C. Ako na ang dietician/nutritionist! LOL
  • Small packs of cheese. I chose Quickmelt, since… madaling matunaw. Quickmelt nga eh. You can try any kinds of cheese: pwedeng keso puti, yung keso de bola from previous holiday (grabe na lang kung meron, baka inaamag na ah), or yung cheesiness mo sa mga mahal mo sa buhay. So keso.
  • For the cheese sauce: a cup of all-purpose flour. All-purpose nga ba? Try nga natin. Plus, 1 bar of butter and a small can of Evaporated milk. I only got that instead of full cream milk dahil naubusan na ako. At mura lang, kita niyo naman eh. Php 15 lang haha!
  • And for the creamy dory fillet, 1 pack of breading mix. I prefer Crispy Fry Mix. Masarap siya, no hassle sa luto (di na kelangan ng itlog), at crispy when cooked… rinig mo yung crispiness :D .

And the procedures:

Let’s start with Deep Fried Creamy Dory Fillet :) .

1) Wash the fillets first, drain, and slice to bite size. Yung totoo, malaki bibig namin? You can season the fish with a seasoning sauce. Nope, hindi si Vilma Santos ang ginamit ko.

2) Lamasin… ang isda hanggang sa maabsorb ang seasoning liquid :D .

3) Prepare the deep fry mix and pan for deep frying. Put enough oil on pan. Mahal ang mantika :D . Medium heat lang yung init. Mahal ang LPG at di masarap kumain ng uling na pagkain :D . Para organized, use your one hand for coating the fillets with the mix and then use your other hand while putting the coated fish sa pan. Plus, don’t coat too much. Pagpagin niyo para madaling maluto yung isda.

4) Fry the fillet well until golden brown (ganun pala, may iba’t ibang kulay ang brown. Kakaibang spectrum ah. May silver brown kaya? Joke.) Turn the fillets on the other side pag luto na yung kabila. Bantayang maigi yung apoy.

5) Pag luto na, ilagay sa platong pinatungan ng tissue para madrain yung mantika. Iwas cholesterol. Tapos itabi para di maabot ng mga pusa/aso at ng mga gusto pumapak :) .

Now for the Cheese sauce:

1) Slice a half of butter and melt it. Low fire. Madaling mangitim ang melted butter. Tip ko sa inyo: put a small amount of cooking oil.

2) Pag tunaw na yung butter, put the flour (konti lang, mga 1/4 tasa lang) then mix hanggang sa matunaw yung kawali. Joke :D . Remember, low fire ah.

4) Then put the milk (ampangit pakinggan pag derechong binasa haha). Stir until fine ang consistency/wala ng buo-buo. Low fire ulit, bantayan.

5) Put the cheese. (Hindi grated yung nalagay ko kasi nawawala yung pankayod namn). The best thing kung bakit Quickmelt yung ginamit ko kasi mabilis matunaw. Stir the sauce hanggang sa tunaw na yung keso.

6) It’s done kapag almost melt na yung keso and then fine yung consistency niya. If masyado malapot, you can put some water on it and stir again. Lalapot yan dahil a) kulang yung milk, b) sobra sa flour, and/or c) hinayaan mo :D . Season with salt and pepper to taste. Konting-konting asin lang since medyo maalat na yung keso.

Lastly, the broccoli.

1). Madali lang ang gagawin. Magpakulo ng tubig sa pan (in my case, kaldero) then pag kumulo, ilagay ang broccoli then cook it for about 3 – 5 minutes. I dunno if the process is called poaching or blanching. Basta ang tawag ko, pagluto.

2) Be careful not to overcook, or else di maganda ang kakalabasan. Ang aim is to have a cooked but still fresh and crunchy broccoli. Basta saglit lang. After few minutes, tanggalin sa kumukulong tubig at patuluin. Set aside.

The last step, the plating. My favorite part. Kung gusto niyo dagdagan ng konting artistic touch aside from salt and pepper, pwede niyo i-arrange yung food on the plate. Parang pang 5-star hotel ang dating, di ba?

Ilatag niyo lang ang few pieces of creamy dory sa isang side, then put some nice cooked broccoli sa tabi. You can put some rice kung gusto niyo mag-kanin. Lastly, Drizzle some cheese sauce on top.

Then, that’s it. We have our Deep Fried Cream Dory + Broccoli with Cheese sauce.

Now my most favorite part. Eating :D .



Conclusion: I therefore conclude na masarap ang kinalabasan. Parang kumain ka na rin sa Yakimix or sa Tokyo Tokyo. Basta ang critical element dito ay yung heat. Huwag masyado mainit ang kalan, madaling masunog ang mga niluluto mo or else kakain ka talaga ng uling. Tamang coating lang sa mga fillet. And also make sure na fresh yung isda, baka mamaya galing pala yan sa fishkill. Yuck. Tapos, konting flour lang para sa sauce. Pag masyado marami, mukhang magluluto ka ng pancake ang kakalabasan. And about sa broccoli? Try niyo kumain nun. Kaya nga may cheese sauce para ganahan kayo kainin yun. Sarap, promise!

Homemade Brownies

Ops, hindi po yung aso ang tinutukoy ko :D Bad dog! Sit and read my blog! Joke :D

These past days, depress na depress ang inyong abang lingkod. Kaya naisipan ko na mag-bake ng brownies. It’s my first attempt to bake, actually. Sanay ako magluto sa kalan pero hindi sa oven. Nakakakaba pero exciting :) This triggered me becuase I need some chocolate para maboost ang Serotonin level ko. It is a compund that makes you feel happy :) Naks, may scientific explanation pa. Bukas na bukas, i-dahilan niyo na kelangan niyo ng Serotonin :D

At last, nagalaw (ampangit pakinggan, parang serial rapist ako haha!) ko na rin ang brownies mix na binili ng Nanay ko. And I even take photos para naman mainggit, ay este ma-share ko sa inyo ang experience ko. Kulang na lang yung aroma para tumulo laway niyo haha! Joke ulit :D

So here are the ingredients according to the box:

  • a box of White King Brownies Mix (2 packs from the box)
  • 2 medium-sized eggs
  • 1 bar of butter
  • peanuts or nuts for toppings

2 Medium -sized eggs. (Yes, may sizes din ang mga itlog! Ops, dumi utak mo ah haha!)

Peanuts. You can use any kind of nuts :)

1 bar of butter. In my case, I used Dairy Cream :) And it is pronounced as 'buh-er'. Sosyal :D

Brownies Mix. In my case, it's from White King :)

I even purchased a aluminum pan for my future baking :) Dissecting frog pans are not recommended. Ewk :P

Procedure:

  1. Preheat the oven :) Medyo swerte ako dahil may magandang oven yung sister ko (may bakery kasi sila).

  2. Beat the eggs (ayoko i-translate sa Tagalog, medyo…hehe) and combine it with the flour mix :)

  3. Next, add the butter (you may melt it first before putting it in the mix) and slowly FOLD the mix. Hindi po literal na pagtutupi, muntanga naman yun :D
  4. Continue to FOLD hanggang sa maging well-mixed. Para malaman na well-mixed, dapat walang namumuong clumps or natitirang buo-buo :)
  5. Put it in the pan and spread it evenly :)
  6. Sprinkle nuts on top. Pwede rin ihalo kaagad sa mix habang hinahalo :)

  7. Bake for about 25 minutes. Para malaman kung luto na, magtusok ng toothpick or barbeque stick. Kung medyo basa pa, di pa luto yun :)
  8. Let it cool before removing it on the pan :)
  9. Cut into desired sizes. Time to practice fractions ulit :D BE FAIR AH! HAHA! :D
  10. Serve. (Hindi yung sa Volleyball ah. Corny ko haha!)

Salamat kay Bathala dahil hindi nasunog yung brownies dahil nakatulog ako habang hinihintay maluto. KAw ba naman, magbake ng hattinggabi, di ka ba aantukin? Haha! Buti na lang at mababait ang mga panadero ng ate ko. Yun lang, kinabukasan ko nakamusta ang mga brownies ko.

Ang verdict ay (4.0 being the highest and 1.0 being the lowest, isama na natin ang R for ‘Repeat’)…

Okie naman yung taste at texture pero medyo matigas dahil nga lumagpas ng 30 minutes yung pagsalang sa oven. Sabi ng ate ko, “Hard Brownies”. Ewan ko kung matatawa ako or maiinsulto ako haha!

Pero isa lang ang masasabi ko: magbabake ako ulit. At ikaw ang i-babake ko! BWAHAHA! *evil laugh*

Joke lang hehe!
